Healthy Banana Cookies

If you’re looking for a fun and healthy dessert, these cookies are for you!

Cook time: 20 minutes
Ready in: 1 hour and 10 minutes
Yields: 36 servings

Ingredients

  • 3 ripe bananas
  • 2 cups rolled oats
  • 1 cup dates, pitted and chopped
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 F.
  2. In a large bowl, mash the bananas.
  3. Stir in oats, dates, oil and vanilla.
  4. Mix well and allow the mixture to sit for 15 minutes.
  5. Drop by the teaspoonful onto an ungreased cookie sheet.
  6. Bake for 20 minutes in the preheated oven, or until lightly brown.
